Ohhhhh Binky you're posting some of my favorite subjects!!!!!!!
![]() Let me share a recipe that makes an awesome cake and you can use it two different ways! 3 eggs 1 1/2 Cups of milk 1 box white cake mix 1 box of instant french vanilla pudding 1 bag of peanut butter chips Mix all ingredients together. Bake in a bundt pan at 350 for 50 minutes. You can use chocolate cake mix, chocolate chips and chocolate pudding instead to have a triple chocolate If you use the silicone it will take a little longer to cook. |

Because I am a swamp rat and I miss home, I'm sharing something tha makes me feel like I'm still connected
Gumbo 3 large boneless skinless chicken breasts salt and pepper 1/4 cup veggie oil 1 lb smoke sausage 1/2 cup all purpose flour 8 cloves of garlic minced 1 green bell pepper chopped and seeded 3 stalks of celery chopped 1/4 cup Worcestershire sauce 1/2 bunch parsley, chopped 4 cups hot water 5 beef bullion cubes 1 14 oz can of stewed tomatoes w/juice 2 cups frozen sliced okra (or fresh, fresh is best) 4 green onions, all parts (except the icky ones) 1/2 lb small shrimp, peeled, deveined and cooked Season the chicken w/salt and pepper. Heat oil in a heavy bottomed dutch oven over medium heat. cook chicken until browned on both sides and remove. Add the sausage and cook until browned and remove. Sprinkle the flour over the oil, add 2 tablespoons of margarine and cook over med heat, stir consistantely until brown which is about 10 minutes and viola, you have the roux. Let it cool on low heat in the dutch oven, melt the remaining margarine. Add the onion, garlic, green pepper, celery and cook for 10 minutes. Add worcestershire sauce, salt and papper to taste and the parsley. cook while stirring frequently for about 10 minutes. Add 4 cups of hot water and bouillion cubes, whisking constantly. Add the chicken and sausage. Bring to a boil, reduce heat and cover. Simmer for 45 minutes. Add tomatoes and okra. cover and simmer for an hour. Just before you serve, add the green onions, shimp and some parsley. Enjoy!!! |

I just made the best dinner and it was very simple!
I baked Talapia with pesto and fresh sliced tomatoes and served it with a side of wild mushroom rice pilaf. |

Sounds Good! I've become a HUGE fish fan! I eat it at least 2-3 times a week...
I do very similar recipes... I usually sprinkle a little something on it, whatever really... Squeeze some lemon on it... and bake it for 15 minutes... Rice Pilaf or a baked potato... Maybe a little salad... I'm good to go! Usually I'll bake Potatoes a few at a time once a week and then just throw them in the oven with the fish and it's hot at the same time... |

After looking at the recipes online, I taylored one for us. Enjoy!

Line bottom of pan with tater tots (you don’t have to use the whole bag) Preheat oven to 350. Beat eggs and add milk. Add salt and pepper. Drain grease from sausage. Pour onion/sausage mixture over tater tots. Pour egg mixture over and top with cheese. Bake 35-45 minutes. Serve with salsa. |

We've been eating a lot of ramen noodles lately since it fits our budget right now, but it gets a bit boring. Out of desperation for variety, I came up with this quick cheat recipe for Spaghetti...
Stimulus Package Spaghetti 1 pkg. Beef-flavor Ramen Noodles 1 can Stewed Italian-style Tomatoes (regular or diced) Optional spices to taste (garlic powder, onion powder, pepper) Break up the brick of ramen into a microwaveable bowl. Add the seasoning packet. Add the tomatoes and juice. Add enough water to cover mixture. Microwave on High for about 4-minutes or longer, until noodles are al dente. Stir and serve. Costs about $1 for a very filling lunch. |

I love it! I need to try that soon!
I made a meatloaf last night that turned out pretty good. 2lbs of beef 1/3 cup onion 2 Eggs 1 Cup of Water 1 package of stovetop stuffing beat eggs, preheat oven to 375, mix everything together and bake for about an hour. I mixed Ketchup, Salsa, hot sauce, dried red pepper flakes and tony chachere together to make a topping that we love. I took the meatloaf out after 50 minutes, spread the mixture on it and baked for another 10. |

Sounds really good Mommad, I generally use oatmeal but the stuffing sounds good. I'd also have to add a lot more onions.

Re: Cooking | #13 | ||

I eat alot of the ramen noodles myself.
I've started making a batch of rice with cream of chicken soup to add to several packs of the noodles and it's lunch for about 4 days. That along with a peanut butter sandwich can be pretty filling. But as you said, it does get boring after awhile. It's amazing what you can create when the budget is tight. |

Re: Cooking | #18 | ||
I'm making this tonight, don't have most of the stuff for the topping so I'll need to substitute. Not sure yet what I'll put in it, of the items listed all I have is the ketchup. Oh and I did add more onions, more like a cup or so. It's in the oven now, so in about an hour or so I'll know if I liked it. |

Re: Cooking | #19 | ||

It tasted pretty good, had a definite stove top stuffing flavoring to it.
I ended up mixing ketchup, mustard, bbq sauce, taco sauce, and some steak sauce together for the topping, gave it a bit of a tangy taste to it. I kind of enjoyed the combination of the meatloaf and the topping, change from my normal just ketchup topping. |

I like to top my meatloaf with a can of tomato soup instead of ketchup. |
